I added a link to Toluma Farms, the place where Cory works. The website might make it seem like a more organized and professional operation than it is.
Also, Hank Shaw, wrote an piece, titled Hare Stew, Hard Times on the Hunter Angler Gardner Cook blog on cooking jackrabbit. He describes how cooking snowshoe hare and jackrabbits is different than cooking cottontails, which are what you get in restaurants.
