1 Pound Leeks, sliced
2 Tablespoons Butter
1 Quart Stock
1 Pound Potato, peeled, cubed
Some Milk

Sweat leeks in butter until soft(salt, of course), add stock, boil, add potato, cook. Blend. Add milk, pepper if you want.

Or do it differently.

is this 1 pound leeks before or after being trimmed?

After, everything is +/- 25% anyway.
